Celebrate NH Collection’s 10th anniversary with a signature breakfast like no other.

NH Collection Helsinki Grand Hansa in collaboration with chef Mikael von Lüders from Finnjävel, the only Michelin-starred restaurant dedicated to genuine Finnish flavors and culinary traditions, has created a unique anniversary dish: Röpörieska with cold smoked salmon, salmon roe and poached egg.

Röpörieska is a traditional barley and buttermilk flatbread from the Savo region in southeastern Finland. Traditionally enjoyed especially during holidays and served with egg butter, this delicacy is reimagined by Finnjävel with a delicately posed 64-degree organic egg instead.

As a country of countless lakes, an extensive coastline, and vast archipelagos, Finland has a deep-rooted tradition of incorporating fish into its cuisine. In this celebratory dish, Finnish rainbow trout is prepared using the time-honored method of cold smoking. The trout roe is served alongside sour cream and onion, adding a rich and refined balance to the dish. To complement the dish, a glass of traditional Finnish kotikalja is served. This non-alcoholic, sweet, and dark malt beverage is naturally fermented and commonly enjoyed as a meal accompaniment in Finland.
